Potato Gnocchi with Spicy Vodka Sauce

Equipment

  • 1 Ovenproof skillet
  • 1 Large pot

Ingredients
  

  • 1 pkg Potato Gnocchi 1 lb.
  • 1 jar Spicy Marinara Sauce 25 oz.
  • 1 tbsp Olive Oil extra virgin
  • 1/2 Onion finely diced
  • 1/2 cup Vodka
  • 3/4 cup Heavy Cream
  • 4 oz Mascarpone Cheese

Instructions
 

  • Turn broiler on.
  • Heat oil in skillet. Add onions and sauté until translucent. Add vodka and cook until reduced (about 3 minutes). Stir in the sauce and simmer for 15 minutes.
  • Stir in cream and cook about 2 minutes. Remove from heat.
  • Bring a large pot of salted water to a boil. Add gnocchi and boil until they float to the surface (about 2-3 minutes). Transfer to skillet using a slotted spoon. Combine with sauce. Spoon mascarpone on top.
  • Put skillet under the broiler until cheese is melted (about 2 minutes).
